Apple Strudel Recipe | Raw Vegan

A few months ago I shared a picture of my new Apple Strudel recipe I was trying out on my Instagram @therawadvantage. I had more likes and comments on that post than nearly any other, so many “please share the recipe” posts that I decided I needed to perfect and share the whole recipe.

So here we are!

To the raw vegan Apple Strudel recipe!

To start you will want to peel and blend the bananas with the psyllium husk till smooth. Pour the thick batter into 4 equal strips on 2 teflex-lined Excalibur dehydrator trays. Using a knife or spatula smooth each line of batter into a elongated oval about 3.5-4 inches wide and 7-8 inches long and approximately 1/4 inch thick. This may take some practice, take heart it gets easier. Place the formed Apple Strudel wraps into the dehydrator at 118 for 4 hours.

At the same time you put the wraps in the dehydrator place the raisins in a dish with just enough water to cover and then a little bit more. After 4 hours carefully flip and remove the teflex sheet from the wraps and put it back in the dehydrator for 1-2 hours.

Once dry on both sides remove the wraps from the dehydrator and trim the edges with scissors or a knife and score 4 slits 2/3 of the way on one side (you may want to watch the video to help with this part). Place them on a dehydrator tray and start to prepare the filling.

Open the young coconut with a large kitchen knife driving the sharp bottom corner into the top of the coconut in 3-4 hard cuts. Again the video and an adult may be needed here. Put the dates and place in the Vitamix with a bit of coconut water and the cinnamon/clove/nutmeg mixture. Blend adding more coconut water if needed, you want a thick paste. Using a coarse grater grate all of the apples, minus the core, into a big bowl. Cover with the date mixture and get every last bit out. Clean the blender and pour the soak water from the raisins into the blender. Dump the hydrated raisins into the bowl with the apples and date mixture and stir well. Spoon equal amounts of the Apple Strudel filling into the bottom side of the wraps and wrap starting with the bottom flap and last with the top (containing the slits you cut earlier. Arrange all four Apple strudels on one Excalibur dehydrator tray and place them back in the dehydrator at 118 for 1-2 hours.

Right before taking the strudels out of the dehydrator scoop the jelly from the coconut and place in the blender with the raisin soak water. Blend till smooth, there’s your icing! Take the Apple strudels out of the dehydrator and place them on a nice plate.

Drizzle the icing on top of each one and enjoy the sweetness!
