One of the biggest reasons that people can have a hard time sticking to a high carb low fat raw vegan diet is not getting enough calories. This is due to fruits and vegetables being the lowest calorie per volume foods we can eat and at the same time are the highest nutrient per calorie foods we can eat. This leads people to feel more satisfied than on other foods while also getting more volume than they ever had, but commonly getting less calories than they need in the long term.

To help with this, higher caloric dense low fat high carb fruit based recipes, such as this banana oatmeal and other puddings, can make it much easier to get enough calories without adding a bunch of fat or cooked foods. This simple raw vegan banana oatmeal recipe really sticks to your ribs, is quick to make, and is loved by kids and adults of all ages.

The Secret Ingredient: Dried Mulberries

The star of this banana oatmeal recipe is dried mulberries! If you haven’t had dried mulberries (white or purple), they are ridiculously amazing. They’re one of the sweetest dried berries out there and just so dang nutritious. I’ll admit I don’t get them too often because they can be really expensive, but when I can find a good deal (like $4 a kilogram), I go off on this treat and make this delicious banana oatmeal.

The texture you get from the mulberries gives this recipe that chunky, oatmeal-like consistency without using any actual oats. Combined with raisins and a creamy banana blend, it creates the perfect pudding-like texture that’s incredibly satisfying.

Raw Vegan Banana Oatmeal Recipe

Raw Vegan Banana Oatmeal Recipe

You will need:

A Vitamix blender or similar powerful blender

1 cup dried mulberries (white or purple)

1/2 cup raisins (preferably without oil or sulfates added)

4 really ripe bananas (1 lb / 460 g)

1 tablespoon hemp seeds

1 teaspoon flax seeds or chia seeds

1/2 teaspoon cinnamon powder

Optional:

1/2 to 3/4 cup hot water (for softer texture)

Instructions:

  1. Place the full cup of dried mulberries in your Vitamix container. Pulse at low speed to break them up, you’re not trying to pulverize them, just chop them up a bit. Some chunks are totally fine and add to the texture.
  2. Dump the pulsed mulberries into a nice big bowl.
  3. Add the 1/2 cup of raisins to the bowl and stir them together with the mulberries.
  4. Choose your texture option:
    • Option 1 (Thicker, chewier): Continue to step 5
    • Option 2 (Softer, less chewy): Add 1/2 to 3/4 cup of hot water to the dried fruit mixture, stir it up, and let it sit for 10-15 minutes
  5. Peel your 4 really ripe bananas and add them to the blender.
  6. Add the hemp seeds, flax seeds (or chia seeds), and cinnamon powder to the bananas.
  7. Blend until smooth and creamy.
  8. Pour the banana mixture over the dried fruit in your bowl.
  9. Stir everything together really well.
  10. Timing:
    • If you chose Option 2, your banana oatmeal is ready to serve right away!
    • If you chose Option 1, let it sit for 10-15 minutes to thicken up
  11. Top with a few extra mulberries and raisins for dramatic effect and serve with a big spoon!

Tips for the Perfect Banana Oatmeal

For sensitive teeth: Go with option two and pre-soak the dried fruit. This makes them a little less sticky and a little less sweet, but still ridiculously delicious.

Raisin selection: Try to get raisins that don’t have any oil or sulfates added. I usually just go for Sunmaid, they make both organic and conventional raisins that have neither, just straight dehydrated grapes.

Banana ripeness matters: Make sure those bananas are really ripe for the best sweetness and easiest digestion and blending.
