I used to be obsessed with French fries. They were my ultimate comfort food, and I never thought I’d be able to enjoy them again once I went raw. I tried a bunch of raw French fries recipes at restaurants and even whipped up a few at home, but they never quite hit the spot. They just didn’t taste like the real deal—until I came up with this version using avocados.

These raw vegan French fries are a game-changer. They taste just like the real thing and are super satisfying. Some people even say they taste more like potatoes than actual potatoes! The secret? Avocados. They give the fries a rich, creamy texture that’s out of this world.

Sure, these fries are a bit higher in fat, so they’re not something I eat every day. But living on a low-fat raw diet, like the “80/10/10 diet” by Dr. Douglas Graham, isn’t about obsessing over daily fat intake. It’s all about balance over the week, month, and even year, which leaves room for some tasty splurges.

I love having these fries with a big salad every now and then. They’re perfect for satisfying those French fry cravings. I hope you love them as much as I do!

Raw Vegan French Fries

2 Hass Avocados (1.1 lb / 500 g)

2 stalks of Bok Choy (.25 lb / 114 g))

1 Tomato (.25 lb / 114 g))

1/4 cup sun-dried tomatoes

2 green onions (.06 lb / 28 g)

Mixed dry herbs to taste (I used Basil, Dill and Parsley)

Recipe Instructions: Raw Vegan French Fries

Blend the tomato, bok choy (reserving the greens), green onions (reserving the greens), and sundried tomatoes until thick and smooth. Pour the blended mixture into a bowl.

Finely dice the green onion greens and bok choy greens, and add them to the bowl with the sauce. Mix well.

Slice the avocado in half and remove the seed. Cut each half into quarters lengthwise, peel off the skin, and then slice each quarter into 4-6 wedges.

Add the avocado wedges to the bowl, half at a time, mixing well to coat them with the sauce. Carefully place each coated avocado wedge onto a dehydrator tray. I recommend using the Excalibur Dehydrator.

Scoop any remaining sauce over the avocado fries to coat them thoroughly. Place the tray in the dehydrator at 118°F for 4-6 hours, flipping the fries halfway through the drying time.

Once ready, enjoy the avocado fries plain, with raw ketchup, or your favorite dipping sauce. These fries are perfect for satisfying your cravings without the guilt. Enjoy!
