Chocolate Persimmon Pudding Recipe that I just created! It is seriously so dang good!

Give it a try, I am confident you will be blown away!

I’ve made many raw vegan puddings over the years, but my new favorite is this Chocolate Persimmon Pudding Recipe! It’s super creamy, seasonal, fat-free, and downright delicious. The key is making sure your persimmons are fully ripe, especially if they’re the astringent type.

Astringent persimmons contain tannins that give them a bitter, dry taste when unripe. If eaten underripe, these tannins can cause a buildup in the intestines, forming what’s called a bezoar. Bezoars are rare, but they can lead to serious blockages in the digestive tract, sometimes requiring medical intervention. I’m not trying to scare anyone away from this phenomenal fruit; I’ve only seen this happen once, but that’s once too many. This case was misdiagnosed and misunderstood, and sadly, it resulted in surgery due to delayed detection. I made a whole post on this topic with more info here. So, double-check those persimmons and make sure they’re squishy and fully ripe to avoid any risks!

But don’t let that worry take away from how delicious, nutritious, and downright amazing persimmons are! In fact, persimmon season is one of my absolute favorites, it’s like nature’s candy. I’ve eaten thousands of persimmons over the last 20 years, and they always leave me feeling amazing. Fun fact: my first YouTube video was all about persimmons and plantains, dubbed “My Favourite Fall Fruits!” You’ve gotta give them a try if you haven’t already, especially in this creamy chocolate persimmon pudding recipe!

Chocolate Persimmon Pudding Recipe

8 Ripe persimmons (about 1 kg or 2.2 lb)

 Pitted dates (100–200 g / .22-.44 lb) 

1 TBSP cacao (or carob)

Blend everything until smooth. Adjust the amount of dates to taste; I like it sweeter with more dates!

That’s it, seriously, pudding for lunch! This serves 1–3 people, and I promise you’ll love it. It’s so good, I couldn’t believe it came to me on a whim. Give it a try!

PS – It can be really nice to add some raisins and a cubed persimmon into the mix, as I did in this newer version above that I posted to IG. So many ways to enjoy!
