Christina Soeberg is my neighbor over in Denmark and one of the most quietly talented recipe creators in this community. Her contribution to the Ultimate Raw Vegan Bundle this year is Enzyme Rich Raw Living Breads, a book that has been getting more mentions and more raw vegan bread recipes and sandwich photos than almost anything else in the bundle. We went live together near the final countdown of the launch window and talked bread, emotional eating, raw food as a process rather than a destination, and the shared philosophy behind both our contributions this year.

Why Bread and Why Now

The inspiration came to Christina in the fall of last year and she just went with it. What she wanted to create was raw vegan bread recipes that genuinely replicate the texture and satisfaction of bread, not just something that looks like bread from a distance. The book is organized into three sections: loaves, crackers and flatbreads, and crepes. The loaf section was the most personally exciting to her and the most technically challenging to get right.

Her entry point philosophy is worth noting. She titled the book Enzyme Rich rather than raw vegan deliberately. The enzyme framing is more accessible to people who are not yet in the raw food world but are curious about adding more living foods. Bread is one of the things people miss most when they change their diet, and raw vegan bread recipes that actually deliver on texture and satisfaction are a genuinely powerful gateway.

What Makes These Breads Work

Most of the loaves in the book share a similar base with different grains, seeds, and vegetables worked in for variety. The technical challenge was moisture balance. Too wet and the bread does not hold. Too dry and the texture suffers. Dehydration times run between twelve and fifteen hours for most recipes, which sounds like a lot until you realize the active prep time is usually around fifteen minutes with the rest happening unattended.

The standout ingredient that surprised Christina most was celeriac root, which she had not used before but found produced a remarkably hearty, dry texture with a savory umami depth. It forms the base of her umami living bread, which she describes as satisfying enough to eat on its own without any filling. Caramelized onion and shiitake mushrooms round out the flavor in a way that genuinely earns the umami label.

Her personal favorite raw vegan bread recipes from the book are the umami living bread and the banana bread. Both have been made repeatedly by Nate and Lissa since the bundle launched, which is about as good a field test as you can get. Someone in the bundle also used one of the loaf recipes as a pizza base, which Christina thought was a great idea and had not even considered herself.

One thing we both kept coming back to is how well raw vegan bread recipes work as a fusion vehicle for everything else in the bundle. A loaf from Christina’s book becomes the base. A sauce from another contributor goes inside. A dressing from someone else ties it together. A simple salad fills it out. Raw Food as a Process Not a Destination

Christina and I spent real time on the emotional and philosophical side of this lifestyle, which I think is often more useful than another recipe breakdown. A few threads worth highlighting.

On perfectionism: I shared my view that perfection is inherent in the process rather than a static endpoint. Every step along the way is perfect for where you are and what you are learning. Christina resonated with this and added that the lifestyle has to feel exciting rather than like a rule book, otherwise it becomes something people white-knuckle rather than genuinely inhabit.

On feeling things intensely: a viewer asked about this and it is worth addressing directly. When you clean up your diet and remove the numbing effect of heavy processed foods, you feel more. This is not a problem. It is your nervous system functioning as designed. The emotions that come up have often been suppressed for years. Letting them move through rather than stuffing them back down with food is part of the process. The intensity tends to settle as the body and nervous system recalibrate.

On undereating: this came up as a key factor in emotional intensity and it is the most common hidden issue on a raw food diet. Even being one to two hundred calories short per day can make mental and emotional states significantly more volatile. Eating abundantly, making sure you are genuinely full and satisfied, is not indulgence. It is the foundation that makes everything else work.

Bulking Up on Raw Food

Christina asked me about gaining weight on raw food since it comes up often. The honest answer is you just eat more. After my motorcycle accident in 2018 I went from around 84 kilos down to 70 within a month of being immobilized. Within one year of starting rehab and then training seriously, I got back up to 90 kilos. All I did was train hard, sleep a lot, and eat until I was genuinely done at every single meal. No supplements, no protein powders, no hormone support. Just abundant raw food and consistent effort. My old nutrition teacher told me in school that eating only fruits and vegetables would eventually cleanse me to death. Twenty-two years later I am still here and still gaining muscle when I want to.
