Day in the Life: 21+ Year Raw Vegan, NYE at a Mexico Resort

There’s something extra special about closing out the year surrounded by sunshine, family, and ocean air. In this Day in the Life, I capture a tropical slice of everyday simplicity, raw vegan style, during our family New Year’s trip to a beautiful all-inclusive resort in Mexico.

Morning Sunshine and Fresh Fruit

My Day in the Life starts with a beautiful sunrise and the sound of the ocean in the distance. While I don’t usually eat breakfast early in the morning, more often 3-4 hours after waking up while at home, it’s hard to pass up a colorful buffet of ripe tropical fruit when it’s right in front of you. So, I filled my plate with papaya, and pineapple, simple, juicy, and bursting with freshness.

Even in an all-inclusive setting packed with desserts and cooked dishes, I’ve found that nature’s foods always satisfy me the most. A ripe pineapple beats any processed treat, especially when it’s grown under the same tropical sun I wake up to each day. Movement comes naturally: taking the stairs instead of the elevator and getting a bit of morning activity before diving into fruit always help me feel grounded and energized.


Midday Movement and Mindful Balance

Later in the day, I headed to the gym for a solid functional workout. My training often includes static leg extensions and backward sled drags to rehabilitate and strengthen my knees, inspired by Dr. Keith Baar’s connective tissue protocols, which have been life-changing for my tendon health, particularly in rehabbing my patellar tendonitis/tendonopathy. Staying active is one of my biggest anchors, especially while traveling. This Day in the Life reminds me that exercise doesn’t have to be rigid. Instead, it’s about listening to the body, finding balance, and letting movement be a natural extension of joy. Whether it’s pool time, skating, rock climbing, surfing, yoga, or a quick gym session, staying consistent keeps energy high and digestion strong.

I’m mindful about sun exposure too, a topic I explore more deeply in my Basal Cell Carcinoma and Dangers of Sunburn article. I aim to get short, safe bouts of sunshine while protecting my skin with clothing, shade or quality sunscreen when appropriate. Conscious sun time, hydration, and whole foods make for the best foundation for vitality, healthy skin, and well-balanced hormones.


Family, Fruit, and Festivities

As the day moves into the evening, the resort begins transforming for its New Year’s Eve celebration. Massive buffets, glowing lights, and joyful faces everywhere, but keeping it fresh as ever and blessed by the special New Year’s Variety, I keep things simple: fresh figs, cherries, watermelon, grapes, and pomegranate, to start, followed by a big hearty salad.

Key tip: When eating a lot of different types of fruit in one sitting, a great food-combining tip for optimal digestion is to start with the most watery fruits and then move to the more dense ones. This really streamlines digestion and sets you up to be ready for that big salad and smooth digestion after!

This part of my Day in the Life reflects what I love most about the raw vegan lifestyle: freedom and flexibility. Instead of worrying about what’s on the menu, I focus on finding what’s fresh, hydrating, and colorful. That approach allows me to fully enjoy time with my loved ones without feeling restricted. At the end of the day, it is just one meal; my main focus is being present with my family or whoever is at the table!

I’ve learned through years of experience that keeping meals simple also means better digestion, lighter energy, and more clarity to embrace all the fun moments, dancing, laughing, and celebrating into the New Year (or hitting the pillow early, which I happily did this time!).


Cultivating Peace, Love, and Seasonal Fruit

As 2026 begins, this Day in the Life serves as a reminder of why I started this lifestyle over 2 decades ago: to live lightly, consciously, and joyfully. It’s about more than what you eat; it’s about tuning in to your intuition, living aligned with your values, and appreciating life’s simple abundance.
