I’m beyond excited to share one of my latest creations: a raw vegan spin on the classic Indian dish, saag paneer, dubbed “Saag Veganeer”! I’ve wanted to recreate this dish for a while, and it’s finally here, featured in my new low-fat raw gourmet recipe book, TRA Retreat Treats. The best part? It’s 100% raw vegan, bringing all the flavors, textures, and warmth of traditional sag paneer without any dairy, oil, or heavy ingredients.

This recipe was a labor of love, and I’ve taken great care to keep it authentic while also making it lighter, fresher, and fully raw. It’s packed with vibrant greens, aromatic spices, and a fun plant-based “paneer” that captures the essence of the original but with a raw twist. As an aside, this Saag Vegaeer dish is even better if you pre-freeze the spinach and then let it thaw before pulsing in the blender with the coconut milk mixture.
