The Abundance of Simple, Fresh Foods

If you’ve ever stayed at an all-inclusive resort, you know how overwhelming the buffets can be. There’s so much food everywhere, but staying raw vegan for over two decades has taught me to simplify. For me, abundance comes not only from variety but from purity, freshness, and simply enjoying what is available that perks me up!

Each morning started with huge, colorful plates of fresh local fruit, papaya, melon, and pineapple, refilled in abundance. I often went back for seconds (and thirds at times) because pre-cut up fruit this good doesn’t come around every day. The sweetness, hydration, and energy from these meals kept me light yet deeply satisfied.

Lunch and dinner started with some juicy fruit and then leaned toward massive salads, crisp greens, shredded carrots, cucumber, tomato, and lots of creamy guacamole and spicy salsa. Yes, the buffet was stacked with every cuisine imaginable, but I always came back to the foods that make me feel best: whole, fresh, ripe, and simple. That’s what What I Eat in a Day truly celebrates: eating intuitively, eating cleanly, and connecting to your body’s natural signals.


Evolving My Meal Sizes and Rhythm

When I first got into raw food more than 21 years ago, I needed to eat many smaller meals throughout the day. My digestive capacity wasn’t yet conditioned for the larger meals and mono meals I enjoy today. Over time, by eating as much as I genuinely desired (and occasionally one or two bites more if unsure), my body, and yours, can adapt beautifully.

Now, my What I Eat in a Day pattern usually includes two to three satisfying meals, often with 4-6 hours between them. This gives me more time for creativity, movement, and play, while also increasing enzymatic strength and digestive efficiency. It’s also nice to be able to go out without carrying food with me unless I want to or I know I will be out for longer than 4-6 hours. When just starting, it can be a true lifesaver to bring 1-2 fruit meals with you so you’re not tempted when out and hungry.

If you’re newer to the raw lifestyle, this is an empowering progression to look forward to. Your body learns how to handle bigger, simpler meals, and your freedom around food grows as your dependence on frequent snacking fades.

Gratitude and Simplicity Abroad

Traveling as a raw vegan for 21+ years, I love how easy it’s become to stay true to this lifestyle anywhere in the world. Mexico’s abundance of tropical fruits and fresh produce makes raw living not just possible, but joyful. Even at an all-inclusive resort, surrounded by endless cooked options, fresh local produce is always my go-to.

Being here with my family for New Year’s was such a blessing, sharing gratitude, sunshine, and simple, vibrant meals that left me feeling light and energized.

What I Eat in a Day isn’t about rules, it’s about showing what’s possible when you trust your body, embrace simplicity, and stay connected to your values, wherever you travel.

You may be surprised, but I truthfully do not find it easier these days to be raw while in the tropics; in fact, I was looking forward to some of the other fruit varieties and making my own dishes when leaving the resort and going back home. So often it’s more about your mindset than anything, but if you become a true fruit hunter, you can find great deals and produce almost anywhere.
